- 4 Orange or Yellow Bell Peppers
- 1/2 lb. Ground Beef
- 1/4 C. Organic Sweet Corn
- 1/4 C. Cabbage
- 1/4 C. Tomato Sauce
- 1/2. C. Diced Onion
- 1/2 C. Roasted Spaghetti Squash
Carve your Bell Peppers like you would a pumpkin! Cut the tops off and just cut out eyes, a nose, and a mouth.
In a casserole dish, stand up bell peppers and cook at 350 degrees for about 15-20 minutes, or until it’s done how you like. I left mine a little crispy so they would hold their ghoulish form. Insert roasted spaghetti squash through the mouth to make it look like they are hurling up their guts. It’s Halloween after all.
In a large pan, brown hamburger until done. Add onion and saute until done. Drain. Mix in the rest of the roasted spaghetti squash, corn, tomato sauce, and cabbage, Fill peppers until full, bursting out of the top if you can..
The mixture will look fantastic until you add the tomato sauce and spaghetti squash, then it takes a slightly scary turn…
Bake for 15-20 more minutes in the oven at 350 degrees.
When you are adding the mixture to the bell pepper, dripping a little tomato sauce “blood” is always a bonus!
