Low-Carb Biscuits

  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tbsp cold butter (coconut oil, walnut oil or any substitute of fat you need, is fine.)
  • 6 egg whites

Preheat oven to 400 degrees F. Have a greased muffin tin ready.
Put coconut flour, almond flour, salt and baking powder in the bowl of a food processor. Add the butter, and pulse a few times.. The butter will chunk into tiny pieces, this is good!
With a hand mixer.. whip the egg whites until they are frothy. Add the eggs to the dry mixture and pulse a few more times. Be careful NOT to overmix this.
Fill your muffin tins about 3/4ths full, they will rise a little, but not as much as normal biscuits.
Bake for 15 minutes until the tops are browned. Makes 6 biscuits.

Serve with Low-Carb Sausage Gravy.
