Paleo Breakfast Stack

  • 1  medium Sweet Potato, shredded
  • 6 eggs
  • 1/3 of a red bell pepper, diced
  • 1/3 of a green bell pepper, diced
  • 1/2 medium onion, shredded or diced
  • 4 slices of canadian bacon/ham
  • 1/2 t. minced garlic


Peel Sweet potato completely. In a large bowl, shred your sweet potato. I ended up shredding about 3/4ths of a larger sweet potato.


In a large pan saute your bell peppers, onions and garlic together until done. (I forgot to take a picture after I added the onions!) Drain, well. Add to shredded sweet potatoes. Add 3 eggs to the mixture and stir. Add Salt and Pepper to taste.


Form into patties. In the same pan you already used to saute the veggies, add 1/4 c. cooking oil. Drop the patties into the oil and fry until done on medium-high heat. Not too high, you want them to cook inside first, then brown up.

Fry up your canadian bacon/ham until brown as well.

Then you want to fry your eggs, anyway you want them. I made mine over-medium.
