- 1 Head of Cauliflower, chopped
- 2 eggs
- 2 T. Onion Powder
- 1 T. Basil
- 1 T. Oregano
- 1 T. Parsley
- 2 C. Mozzarella Cheese
- 1 C. Parmesan Cheese
- 2 T. Garlic
- 1 T. Crushed Red Pepper
- Salt & Pepper to taste
- 4 T. Pasta or Pizza sauce
- Whatever toppings you like on your pizza (onions, bell peppers, sausage, beef, pepperoni), enough for two personal sized pizza’s
Take your chopped Cauliflower and “rice” it. Put it in a food processor and pulse it until it turns into rice consistency. Put the riced cauliflower into a tupperware container with a lid. Microwave for 8 minutes or until cauliflower is soft.
Using a dish towel or multiple paper towels, squeeze any excess liquid out of the cauliflower. This is super important, you want your cauliflower to be pretty dry. Take half of the cauliflower, (about 1 /12 C.) and mix with 1 T. Garlic, a dash or two of salt, and a dash or two of pepper, half of all the other spices.. (parsley, basil, oregano, crushed red pepper and onion powder), 1/2 C. Parmesan Cheese and 1/2 C. Shredded Mozzarella, and 1 egg. When you are done the mixture should look like the picture below. Stiff dough that you can form. If it’s not firm enough, add more cheese. Everyone loves cheese!
Put the dough onto a pizza stone or baking pan. I used a silpat, because I love that thing.. spray whatever you use with a little spray oil. Form a “pizza crust”, pretty thin, but not overly thin. Bake for 15-20 minutes @ 425 degrees.
When it comes out of the oven, it should look like this!
Now do the same to the rest of the cauliflower, and make another crust.
Once done, drop half of the pasta/pizza sauce you have on top of the crust.. Then top with whatever toppings you have. Ending with cheese. Bake for another 10 minutes. Eat!
