Sausage & Pepper Mix

  •  1 pound sausage, sweet or hot Italian, rolled into small bite-sized bal
  • 1/4 cup water
  • 1 Tbsp olive oil, exra-virgin
  • 2 large sweet red peppers, or green, seeded and cut into 1⁄2-inch-thick strips
  • 1 large red onions, thickly sliced
  • 1 clove garlic, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 1 C.  Beef Broth

Brown sausage in a large frying pan.  Add broth & veggies, and let simmer about 20 minutes until veggies are tender.  Turn up the heat until broth evaporates. Serve over Rice or pasta!
