Paleo Sausage & Egg Muffins


  • 1 Roll of Sausage (16 oz)
  • 1/2 C. Fresh Spinach, Chopped
  • 9 Eggs
  • 1/4 C. Green Pepper, chopped
  • Salt & Pepper

In a 12 muffin tin, layer sausage on the bottom forming a shell in each cup.   You can do the next part in two ways, depending on how you like your eggs.  You can whisk the remaining ingredients together, essentially making scrambled eggs.. or you can layer the muffins with spinach and green onion.. dropping a whole egg on top, then salt and pepper. Bake @ 350 degrees for 30 minutes.
