First of all, I can not stress enough that the best thing I have ever purchased, is my pressure cooker. It’s amazing. If you don’t have one, feel free to slow cook your pork roast and wait around for 6-7 hours. (Depending on the size) Otherwise, enjoy a perfectly cooked pork roast in about 90 minutes.
You obviously can top this anyway you like, but this is the way I like mine!
- Pork Butt Roast – 3-5lbs.
- 2 T. Cumin
- 2 T. Garlic Powder
- 2 T. Onion Powder
- 2 T. Paprika
- 1 medium Onion
- 1 medium Tomato
- Guacamole (or just Avocado slices)
- Cilantro (your preference for how much)
- 1/4 Cup Lime Juice
- Pinch of salt
- 1/2 t. Ground Black Pepper
- Flour Tortilla’s (Unless Paleo/Keto, then lettuce or Paleo Tortilla’s for you!)
Mix seasonings (Cumin, Garlic, Onion, Paprika, salt & pepper) together in a bowl. Rub mixture all over pork roast until completely coated. Sear Roast on all sides in the bottom of the pressure cooker (if yours has that option!) or a large frying pan on medium-high for 2-3 minutes per side or until it has a nice seared brown outer layer. This is where you a will put the roast in a slow cooker or into the pressure cooker, whichever you are using. Pour a cup of water in the bottom of whichever you are using. Set the pressure cooker on high pressure, for 75 minutes. (Will be done in about 90!)
While that is cooking, Slice/Dice your onions, tomatoes and avocado’s, however you prefer them for a “taco.” Chop up some of the cilantro, roughly(doesn’t have to be fine, just into bite sized pieces.) , throw it in a large zip lock with the onions, tomato’s and lime juice. Shake that mofo.
Once the pressure cooker lets you know the roast is done, fork it! If it shreds easy, it is ready to go, if not, stick that bad boy back in there for 25 more minutes. It’s literally impossible to overcook it. You want the pork to completely shred when you put your fork on it. It should just melt under the fork.
That’s it! Make a taco! Eat it! ;D
